WHere is a home-style take on a cocktail found on the seasonal menu. It's a party-sized prepared mix which is bursting with the flavours of a holiday season, making it perfect for your celebration. Reserve the remaining syrup to use in brunch beverages, sweets, or for additional servings of this cocktail.
The Bikini Cocktail
Yields 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Place the listed ingredients into a saucepan, bring to a light boil, stirring to dissolve. Next, remove from the stove and leave to cool completely. Decant into a sterilised bottle, cap it keeping it in the fridge, it will last for around a month.
For the Premix: Combine all the liquids into a sizeable container, let it rest for an hour, then strain best through muslin, so it's completely strained.
For serving: Measure 85ml from the batch mix into a stirring glass filled with ice, and agitate carefully for about 60 seconds until cold. Pour into an cold coupe glass or a similar vessel, top with a few cranberries adding the final touch with a brief mist of the essential oil above the glass.
